With the new updates, if you flick the screen up to the control panel you can put it into airplane mode, this makes it untraceable too.

If you bury it in a folder somewhere and set up Restrictions on your phone so they can't delete apps, as soon as they turn it on it takes pictures of them without them knowing and send back to you with location etc. Works on a Mac too, and you can switch the license between devices if you are taking your mac on holiday etc.
Obviously, they need to be on a wireless or cell network so wont work if they turn on airplane mode and restore/ wipe the phone offline. Best not to have Control Center enabled from lock screen anyway, then they can't turn wireless off.
